There's no shortage of things to make with my seitan bacon! This is but one of my suggestions. You could also make my neighbor's 15-bean soup or veganize Southern Living's succotash.

Basically, anything that includes diced ham will work - and little is more iconic than split pea soup.
Once you've made seitan bacon, this recipe comes together quickly!
Cut “bacon”, onion, celery, and carrots into small dice. Maintain separate piles of “bacon” and onion, but pile celery and carrots together.
In a lg pot, melt oil over med heat. Add “bacon” and sauté 5-10 min, until lightly crusted. Remove leaving oil behind and set aside.
Transfer onion to pot. Sauté 5 min, then add celery and carrots. Sauté another 5 min.
Incorporate remaining ingredients (minus croutons). Increase heat to med-hi and bring to a rapid boil, then partially cover and reduce heat to med-lo. Simmer and stir occasionally 50-60 min, until peas have broken down.
Remove bay leaf. Serve immediately with croutons or other garnishes as desired.
The possibilities of my seitan bacon are endless! I'm partial to my neighbor's 15-bean soup, but you could make a number of other things. I also like using it to veganize Southern Living's succotash recipe.
