Template more than recipe, Julia Child’s leek and potato soup is nevertheless famous – and about 50% animal products (chicken stock and heavy whipping cream).

Neither, thankfully, is difficult to replace. Yet the dairy-free heavy whipping cream you use makes a big difference! Read my product review of substitutions to learn why I practically require Country Crock Homestyle for vegan vichyssoise.

Make Vegan Vichyssoise a Meal

Did you know that Goldfish were meant to be a bar snack? They were also one of Julia Child’s favorite munchies! I don’t know if she ever paired them with her vichyssoise, but I daresay she’d approve of this combination.

Unfortunately, Goldfish about as plant-based as they were meant for children. I’m thankful Lexi Harrison and Beth Sinclair behind Crowded Kitchen developed a recipe for these crackers that veganizes well!

Veganization: Vichyssoise

Description

Below, a "part" is any measure of volume (cups or quarts, milliliters or liters). Make as much as you wish!

And take care to clean your leeks well. The layers of these onions tend to trap some of the sandy soil in which they grow. My preferred method for removing their grit is as follows:

  1. Procure a salad spinner. Trim root and dark green parts off each leek, then reserve trimmings for stock or discard.
  2. Halve and slice each leek into ¼-in (6-mm) slices. Transfer to spinner.
  3. Fill spinner with water, then jostle leeks with hands. Drain, rinse, and repeat at least once.
  4. Spin dry and proceed.

Lastly, though I prefer to give precise salt and pepper measurements, I cannot here; the "chicken" broth you use greatly impacts how much you need. Sometimes, I don't add them at all!

  1. Simmer prepared vegetables in broth about 40 minutes, until very tender.

  2. Using a blender, purée soup in batches. Transfer each batch of blended soup to another pot.

  3. Stir in cream and seasonings. If serving chilled (as is traditional), slightly oversalt.

    Our ability to detect salt weakens as the temperature of our food decreases.
  4. Chill if desired, then serve and sprinkle on chives.
