And yet writing nothing means no one will find it.

Suffice it to say I wrote this recipe for Coconut Lime Vegan Fool years ago. I loved it then, and I love it now. It’s a whole food plant-based key lime pie parfait!

What is fool?

Fool is a British dessert of sweetened mashed fruit (usually berries) and whipped cream. The curious name may come from the French word fouler meaning “to trample”, or “to compress”.

Mash, trample, and compress indeed describe what I need you to do to your avocado! Though my fruit of choice is no berry – Avocados are stone fruits. – my culinary technique is certainement à le fouler.

Whole Food Plant-Based Whipped Cream

Coconut whipped cream typically annoys me because it takes like coconut. I love coconut; I just generally prefer more dairy-like heavy whipping cream (coming soon). But I want it here!

Prepare

  1. If necessary, place avocado in a brown bag (preferably with an apple or banana) and wait 1-2 days, until dark and soft.
  2. Meanwhile, chill entire can of coconut milk in the back of the refrigerator at least 8 hrs.

Make & Serve

  1. Zest and juice lime into a med bowl, then add ripe avocado flesh and 2 Tbsp (30 mL/42 g) agave. With an electric mixer on hi, beat 1-2 min, until creamy. Set aside.
    Some lumps are OK!
  2. Open bottom of chilled can, then pour off and reserve translucent, thin coconut water. Spoon opaque, thick coconut cream into a lg bowl. Add remaining 1 Tbsp (15 mL/21 g) agave to coconut cream and beat on hi 2-3 min, until fluffy.
    Coconut water is great as-is, or in smoothies and baked goods!
  3. Scrape avocado mixture into coconut whipped cream, then fold 3-4 times, until marbled but not mixed. Divide between glasses and garnish with graham cracker crumbs if desired.
