Veganization: Angel Hair with Tomatoes and Basil

One could call this Superlative Pasta. Of my veganized San Giorgio pasta recipes, Angel Hair with Tomatoes and Basil is the fastest and easiest. It also boasts the shortest ingredients list, and with 3 lbs/1.4 kg of small tomatoes, it’s the freshest as well!

However, if you’re feeding young children, expect it to be the messiest…

Basically, I stumbled upon a collection of recipes which allowed me to combine my product review winners and other go-to ingredients interacted in savory contexts. (I’d already meta-tested them in a sweet application, Make-It-Mine Cheesecake.)

Description

Whether you use nutritional yeast or dairy-free Parm, Angel Hair with Tomatoes and Basil is the easiest of four related pasta veganizations:

Instructions

  1. Wash and dry tomatoes. Peel and slice garlic, julienne basil, and finely grate “cheese” (if necessary). Set each aside separately.

    Don’t skip drying your tomatoes! In Step 3, they go into hot oil; water will cause it to splatter.
  2. In one lg pot, measure olive oil. In another, bring 4-6 qt/L water to boiling and cook pasta to desired firmness according to package directions.

  3. While pasta cooks, heat oil over med-hi heat about 1 min, until shimmering. Carefully add tomatoes and stir 3-4 min. Add garlic, then reduce heat to med and stir 1-2 min more.

  4. Transfer 1 cup (240 mL/g) pasta water to tomato mixture, then drain pasta. Briefly set pasta aside.

  5. Finish sauce by adding “cheese” and stirring 3-4 min, until about half the tomatoes are broken down and “cheese” is melted (if applicable). Season with salt and pepper to taste, then remove from heat and stir in basil.

  6. Transfer pasta to sauce. Use tongs to toss until coated and serve immediately.
